He’s also the owner of a beer-centric pub on SE Belmont Street called The Globe. Our Beer of the Week is Alaskan Imperial IPA, and Alaskan Brewing’s Darin Jenson talks about the story behind the beer. We spoke with Jacob Grier and Tal Nadari of Bols Genever USA, which has teamed up with Upright Brewing to bring the classic tradition of kopstootje (translated: “little head-butt”) to Portland and beyond! Upright has brewed Kopstootje Biere, a perfect pairing with Bols Genever for the Dutch tradition of a shot of genever and a beer.
To traditionally enjoy a kopstootje, the genever glass must be filled to the rim, so full that it would spill if you tried to touch it to your lips. So, instead, the Dutch take the first sip right off the table! Then you take a sip of beer to back the genever. It’s something you really must experience for yourself!

_This recipe accompanied sample bottles of Widmer’s X-114 IPA. It comes from Dustin Gettmann, lead chef at Saraveza Bottle Shop & Pasty Tavern. _
Mahi Mahi Ceviche
(serves 4)
1 lb. mahi-mahi
1 medium sweet onion
1 jalapeno
1 red bell pepper
1 bunch cilantro
4 limes
2 lemons
2 tsp. salt
Juice limes and lemons and reserve citrus in a large, non-reactive bowl.
Dice mahi-mahi into 1" pieces.
Finely dice onion, bell pepper and cilantro.
Add all ingredients to bowl of citrus, combine, and refrigerate for 1-2 hours, allowing the citrus’ acid to “cook” the fish until it becomes firm and opaque.
Season with salt (and a little pepper) to taste.
Garnish with chopped cilantro and serve with tortilla chips. (YUM!)
